I know, I know, it’s citrus season but since we have local apples, I couldn’t resist. Red Prince Apples are one of our favourite local Ontario winter apple. Located in Thornbury but also grown across Canada in Quebec and the Maritimes. They are a cross between Golden Delicious and Red Johnathon. They have a tangy-sweet taste and a rich, crisp red skin that is high in antioxidants. As you noticed in the recipe, that is why I left the skin on.   BEST FAVORITE FOODS IN THE WORLD  Spanakorisotto Arancini   These are fried risotto bowls with mozzarella in the middle.  After our recent gourmet lesson in January making Classic Risotto, Seafood, Roasted Broccoli and Cannoli with sweet Ricotta and Chocolate chips, I took the leftover risotto and formed themed into balls, stuffed them with cheese and lastly breaded and fried them until they’re crispy and delicious.  Serve this with a warmed marinara sauce and you’re in culinary heaven. Arancini are a delicious and addictive Sicilian snack made with risotto, coated in breadcrumbs and fried deep golden. You all know how much I love colliding cultures and sharing them with all of you.
